Eating Well

My cousin Frankie was in the C.I.A. He's not a spy; he's a chef. C.I.A. stands for the Culinary Institute of America, and it's one of the finest culinary schools in the country. Like most chefs, Frankie is different from the rest of us. He has the temperament of a street fighter and the sensibilities of an artist. He will bark orders at his staff like a sailor, then reach into a hot oven and pull out a searing pan without a glove. He'll then use that foul mouth and the same seemingly indestructible hands to taste and carefully arrange food on a plate until it pleases him. For Frankie, the kitchen is a studio and the plate is a canvas, and I envy him.

I like food and I like to cook. Unfortunately, being a chef is not in my blood. I have simple needs in the kitchen. Frankie advised me to get a good set of knives. "Buy them once, spend money, don't be cheap, and take care of them," he said. I took his advice and have since also splurged on a good set of pots and pans. My ambitions, however, largely outweigh my skills in the kitchen. But I love using the tools, and I have never regretted spending the money on them. In fact, they, as much as the food, make cooking fun for me.

I think a lot of people are like me, and that's why this is one of my favorite issues that we do at Potentials.
